Katrina Relocated NOLA Native Chef Making Comeback

Bringing the “Pastry of the Year” (Food & Wine Magazine 2012), Kouign Amann to NOLA

I just got back to the city I love, am making a comeback, & aim to enhance the pastry business in Nola. We have plans to do Gelatos, Tiramisu, French pastries, & our own versions of Nola classics (King Cake, Shoe sole, modern interpretation of the beignet, the best pecan pie you have never had, etc…) just to name a few.

In the 8 years that I was away, I spent time in Europe & America working in many restaurants. They include The French Laundry in Napa Valley, California, Guy Savoy in Las Vegas, The Capital Hotel in London, England (under Chef Eric Chavot), Maestro, Tyson’s Corner, VA (under Chef Fabbio Trabocchi), & The Spielweg Romantik Hotel in the Black Forest, Germany. I am a (CIA) Culinary Institute of America Graduate & before Katrina I spent time in Commander’s Palace, Stella, & working for Chefs like John Besh, Michael Sichel, & Tom Wolfe.

My wife, Lya is a pastry chef trained in Europe & a Le Cordon Bleu (London) graduate. We had our first child a year ago in Salt Lake City. During that time, I had to do pastries out of necessity to take over for Lya & have been at it for the last year and a half there.
Now that we are back in New Orleans, we will be opening a pastry shop named La Petite Sophie Patisserie, after our little girl, Sophie.

Wikipedia definition: an online threshold pledge system for funding creative projects. Kickstarter has funded a diverse array of endeavors, ranging from indie film and music to journalism and food-related projects.

Remember: Kickstarter is All or Nothing

If the project ends and their Money goal is not reached, you are not charged & the project receives no money.

What is in it for me?

Rewards are given by the projects, to thank all of the generous people who donate in support. Like, when you support your local public radio station during a funding drive& you receive mugs, t-shirts, books, concert tickets, restaurant gift certificates, etc…  Rewards vary depending what the project is and how generous you are.

How do I know if a project is not just a scam?

Do some research first! When I support a kickstarter campaign, I look over the project, its creators, & websites that go with it. Does it look legit? Does it seem that they put a lot of effort into the video, written section, & goals? Is it clear what is going on and make sense? You need to remember, why would a businessman go through all of the trouble to create a brand & attach their face to it, just to destroy his name? Ask people that have backed the project. Often times many supporters know the project’s creators personally or know someone who does. In order to release a project you need kickstarters approval. They are good at identifying scams, they have to be . After all, Kickstarter’s name is on the line too.
